Jasmine, Lemon, Blackberry

Huver is a third generation coffee farmer. He has been actively working alongside his father since 2015. They refer to this coffee as "Rocket Flower" and it is perhaps the best nickname for a coffee we've seen to date. The process for this coffee begins with careful selection of ripe cherries, then a 36-hour pre-fermentation in cherry. Following that the cherries are floated in a saltwater hopper, afterwards they undergo anaerobic fermentation in stainless tanks before being moved to a second hopper containing brewer's yeast and other enzymes to ferment for an additional six days. The beans are then mechanically dried for 2-3 days, followed by a 15-day stabilization process. This laborious, meticulous process results in coffee that is explosively floral with jasmine and perfumed bergamot. A stunningly crisp and refreshing coffee that has quickly become a favorite around the roastery.
