Alejandro Martinez owns a 600 acre farm called San Jose, where he has 150 acres planted with Anacafe 14, among other coffee varieties. Anacafe was discovered in Guatemala. It is a natural cross between the varietals Pacamara and Catimor. On Alejandro’s farm, the coffee is picked ripe and fermented in its cherries for about 18 hours. It’s repulsed the following day and washed before being set out to dry on a rooftop drying structure. We love this coffee for its simplicity. It is a fabulous brewed coffee, boasting familiar flavors that tend to leave us describing it as “coffee-coffee”. It’s comforting and warm, boasting subtle dried fruit sweetness. There is no mystery as to why this coffee is a favorite of both our staff and our customers year after year.
